Honey-Chipotle Chicken Quesadillas
Cheesy quesadillas feature rotisserie chicken coated in a sweet and spicy honey-chipotle sauce.

Preheat a lightly oiled grill pan over medium heat.

Blend 1/4 cup honey, 1/4 cup water, 1 tablespoon minced seeded chipotle chiles, 3 tablespoons adobo sauce, and 1/4 teaspoon salt until smooth.

Combine the honey mixture with 2 cups (12 ounces) shredded rotisserie chicken in a bowl, stirring to coat.

Distribute the chicken mixture and 2 cups (8 ounces) shredded quesadilla cheese evenly over half of 4 (10-inch) flour tortillas, then fold each tortilla in half.

Cook quesadillas on the grill pan until cheese melts and grill marks appear, 45 to 90 seconds per side.

Remove to a cutting board, slice each quesadilla into 4 wedges, and serve.
