Honey-Chipotle Chicken Quesadillas

Instructions

  1. Preheat a lightly oiled grill pan over medium heat.

  2. Blend 1/4 cup honey, 1/4 cup water, 1 tablespoon minced seeded chipotle chiles, 3 tablespoons adobo sauce, and 1/4 teaspoon salt until smooth.

  3. Combine the honey mixture with 2 cups (12 ounces) shredded rotisserie chicken in a bowl, stirring to coat.

  4. Distribute the chicken mixture and 2 cups (8 ounces) shredded quesadilla cheese evenly over half of 4 (10-inch) flour tortillas, then fold each tortilla in half.

  5. Cook quesadillas on the grill pan until cheese melts and grill marks appear, 45 to 90 seconds per side.

  6. Remove to a cutting board, slice each quesadilla into 4 wedges, and serve.
