Instructions

  1. Preheat the oven to 350 F.

  2. Combine honey, brown sugar, bourbon, mustard, and orange juice; simmer for 5 minutes and set aside to create the glaze.

  3. Pat the pork roast dry, trim excess fat, and place it on a roasting rack. Make small slits over the roast and insert a sliver of garlic into each.

  4. Season the roast with salt and pepper, then arrange bacon over it if desired.

  5. Roast for approximately 1.5 hours until the internal temperature reaches 145 F. Brush with the glaze and continue roasting for an additional 10 minutes.

  6. Tent the roast loosely with foil and let it rest for 15 minutes.

  7. Carve and serve.
