Instructions

  1. Preheat the oven to 200 F.

  2. Peel and thinly slice the vegetables (1/16-inch thick).

  3. Soak all sliced vegetables in ice water for 30 minutes, then drain and pat them thoroughly dry on paper towels.

  4. Heat 3 inches of oil to 350 F in a Dutch oven.

  5. Fry vegetables in 1/2-cup batches until crisp and golden (about 2 minutes), transferring them to paper towel-lined plates to drain.

  6. Spread the fried chips on baking sheets and place them in the preheated oven to keep warm, repeating for all remaining vegetables while maintaining oil temperature.

  7. Combine salt, garlic powder, and onion powder for seasoning.

  8. Toss the warm chips with the seasoning mix in a large bowl and serve immediately.
