Instructions

  1. Preheat the oven to 450 F with a large nonstick sheet tray inside.

  2. Combine flour, yeast, and salt in a large bowl. Separately, stir warm water and olive oil.

  3. Form a well in the dry ingredients; pour in the liquid mixture and blend until combined.

  4. Flour a work surface and hands, then knead the dough for 15 minutes until soft and elastic.

  5. Lightly oil the mixing bowl, return the dough, cover, and let it rise in a warm place for 30-45 minutes until doubled.

  6. While the dough rises, combine all topping ingredients in a large bowl and set aside.

  7. On a floured surface, divide the risen dough into 6 equal pieces. Roll each piece into a very thin round or oval.

  8. Spread the prepared topping thinly and evenly over each dough round.

  9. Carefully transfer the lahmacun onto the preheated sheet tray, ensuring no overlap.

  10. Bake for 7-10 minutes, until the topping sizzles and dough edges are browned.

  11. Serve hot with lemon wedges and sliced onions mixed with sumac and parsley.
