Homemade Tomato Sauce

An easy homemade tomato sauce recipe made from fresh tomatoes, which can be seasoned as desired and preserved by canning or freezing.

Instructions

  1. Start boiling a large pot of water and prepare an ice bath.

  2. Score an X at the bottom of each tomato.

  3. Blanch tomatoes in boiling water for 2 minutes, then transfer to the ice bath to cool.

  4. Drain blanched tomatoes and let cool for 5-10 minutes.

  5. Peel tomatoes, starting from the X mark, once cool enough to handle.

  6. Core, halve, and deseed tomatoes.

  7. Heat olive oil in a large pot; sauté onion and garlic until soft (5 minutes). Add optional bell peppers and carrots, cooking for an additional 5 minutes.

  8. Add tomatoes, sugar/baking soda (if using), basil, oregano, optional rosemary and tarragon, salt, and pepper to the pot, then bring to a boil.

  9. Reduce heat and simmer uncovered for 2-3 hours, stirring frequently, until the sauce reaches desired consistency.
