Instructions
-
Start boiling water for the mashed strawberries.
-
Wash and hull strawberries, then mash them in a large crock.
-
Cover the mashed strawberries with boiling water, add lemon juice, and stir for 2 minutes.
-
If using, mix wine yeast into the mash once it cools to 85°F.
-
Cover the crock with a clean cloth; let it rest in a cool, dark place, stirring daily for one week.
-
After one week, strain the mixture through a double layer of cheesecloth, discarding the pulp.
-
Combine the strawberry liquid with sugar, stirring until dissolved, then pour into a clean crock.
-
Let the liquid stand another week, stirring daily.
-
After the second week, transfer the liquid into 1-gallon glass wine bottles, sealing loosely or with fermentation locks.
-
Allow bottles to rest in a cool, dark place for three months.
-
Once the wine is clear and fermentation ceases, bottle it individually, cork, and age for a minimum of one year.
