Instructions

  1. Squeeze excess water from chopped spinach.

  2. Blend spinach with eggs until smooth and dark green.

  3. Combine flour and salt, then create a well in a mound of the mixture on a floured surface.

  4. Pour the spinach-egg mixture into the well and gradually incorporate the flour using a fork, then knead for 5 minutes until the dough is smooth and slightly tacky.

  5. Cover the dough with plastic wrap and let it rest for 20 minutes.

  6. Set up your pasta maker and divide the dough into 4 to 6 equal sections, keeping unused pieces covered.

  7. Flatten one dough section into a rectangle, then feed it through the pasta maker on the widest setting, folding it into thirds, and repeating this process several times.

  8. Continue rolling the pasta sheet through progressively smaller settings until it reaches the desired thinness.

  9. Utilize the pasta sheets as-is for dishes like lasagna, or cut them into noodles or form them into ravioli.
