Instructions
-
Preheat oven to 375 F.
-
Combine 1 packet active dry yeast with 1/2 cup warm water; let foam 10 minutes. Separately, whisk 2/3 cup milk, 1 egg, and 3 tablespoons melted, cooled butter.
-
Add milk mixture, 2.5 tablespoons sugar, 1.25 teaspoons salt, and 3 cups all-purpose flour to the yeast mixture. (For bread machine: whisk 1/2 cup water, 2/3 cup milk, 1 egg, 3 tablespoons melted butter; add liquid, flour, sugar, salt, and yeast to machine as per manufacturer's order and run dough cycle).
-
Knead manual dough 8-10 minutes until smooth and elastic, adding flour if necessary. Place in a greased bowl, turn to coat, cover, and let rise 1 to 1.5 hours until doubled. (For bread machine dough, remove after cycle to a floured surface).
-
Line two baking sheets. Punch down dough and pat into a rectangle.
-
Cut dough into 18 pieces. Shape into firm balls, flatten slightly, and arrange on prepared sheets 2-3 inches apart.
-
Cover buns; let rise 30 minutes.
-
Prepare egg wash by whisking 1 egg white with 1 tablespoon water, if using. Brush buns with egg wash and sprinkle with sesame or poppy seeds, if desired.
-
Bake for 15-18 minutes until golden brown.
-
If unseeded, brush baked buns with melted butter. Cool on a rack, then split and fill.
