Whisk together all specified ingredients for the self-rising cornmeal mix until thoroughly blended; store in a sealed container.

Preheat the oven to 425 F (220 C).

Grease a 10-inch iron skillet, an 8-inch square baking pan, a corn stick pan, or a muffin pan; heat iron pans in the preheated oven.

In one bowl, whisk the prepared cornmeal mix with optional sugar and optional baking soda (if using buttermilk).

In another bowl, whisk milk or buttermilk with the egg, then stir in the vegetable oil, melted shortening, or melted butter.
