Homemade Red Chrain

Instructions

  1. Start boiling enough water in a medium saucepan to cover beets by 1 inch.

  2. Add beets, reduce heat, and simmer uncovered for 30-40 minutes until tender; drain and set aside.

  3. While beets cook, peel and grate horseradish; combine it with vinegar, sugar (if using), and salt, then mix well.

  4. Once beets are cool, peel and finely grate them.

  5. Combine grated beets with the horseradish mixture, mix thoroughly, and adjust seasoning.

  6. Store the condiment in the refrigerator.
