Instructions

  1. Preheat oven to 400 F.

  2. Prepare a muffin pan by greasing and flouring, or use paper liners.

  3. Combine flour, baking powder, salt, cinnamon, and nutmeg in a bowl.

  4. Melt butter, then let it cool slightly.

  5. In a separate bowl, beat eggs, then mix in sugar, milk, raisins, and vanilla.

  6. Gradually whisk the cooled melted butter into the egg mixture until fully incorporated, ensuring butter is not hot.

  7. Combine wet and dry ingredients, mixing no more than 10 seconds until just moistened; lumps are acceptable to avoid tough muffins.

  8. Spoon batter into prepared muffin pans and bake immediately.

  9. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
