Homemade Raisin Bread
Soft, delicious homemade raisin bread, excellent for toast, yields two loaves.

Instructions

Dissolve yeast in warm water.

In a large bowl, combine raisins, warm milk, butter, sugar, and salt; stir until sugar dissolves. Cool mixture to lukewarm.

Stir 1 1/2 cups flour into the milk mixture and beat until smooth.

Add yeast mixture and beaten eggs to the milk mixture, blending well.

Mix in enough remaining flour to form a soft, stiff dough.

Knead dough on a lightly floured surface for 10 minutes until smooth and elastic.

Grease a large bowl, place dough inside, and turn to coat; cover and let rise in a warm spot for 1 to 1 1/2 hours until doubled.

Punch dough down, divide into two equal portions, cover, and rest for 10 minutes.

Shape dough into two loaves and place into two greased 8x4-inch loaf pans.

Cover pans and let loaves rise for 45-60 minutes until almost doubled in bulk.

Preheat oven to 375 F.

Bake for 25 minutes; cover loaves with foil for the last 10 minutes if they begin to brown excessively.

Remove loaves from pans and cool on racks.
