Homemade Raisin Bread

Soft, delicious homemade raisin bread, excellent for toast, yields two loaves.

Instructions

  1. Dissolve yeast in warm water.

  2. In a large bowl, combine raisins, warm milk, butter, sugar, and salt; stir until sugar dissolves. Cool mixture to lukewarm.

  3. Stir 1 1/2 cups flour into the milk mixture and beat until smooth.

  4. Add yeast mixture and beaten eggs to the milk mixture, blending well.

  5. Mix in enough remaining flour to form a soft, stiff dough.

  6. Knead dough on a lightly floured surface for 10 minutes until smooth and elastic.

  7. Grease a large bowl, place dough inside, and turn to coat; cover and let rise in a warm spot for 1 to 1 1/2 hours until doubled.

  8. Punch dough down, divide into two equal portions, cover, and rest for 10 minutes.

  9. Shape dough into two loaves and place into two greased 8x4-inch loaf pans.

  10. Cover pans and let loaves rise for 45-60 minutes until almost doubled in bulk.

  11. Preheat oven to 375 F.

  12. Bake for 25 minutes; cover loaves with foil for the last 10 minutes if they begin to brown excessively.

  13. Remove loaves from pans and cool on racks.
