Instructions

  1. Combine pomegranate juice, sugar, and lemon juice in a saucepan over medium-high heat.

  2. Bring the mixture to a simmer, stirring until the sugar dissolves.

  3. Reduce heat to a gentle simmer and cook uncovered, stirring occasionally, until the mixture is syrupy and reduces to 1 to 1 1/4 cups.

  4. Cool in the pan for 20-30 minutes, then transfer to a clean glass jar, cover, and refrigerate for up to a month.
