Homemade Pineapple Tepache: A Refreshing Fermented Drink

Instructions

  1. Combine 4 1/2 cups water and 1/2 cup piloncillo or brown sugar in a 2-quart pot or jar, stirring until the sugar dissolves.

  2. Rinse and peel one ripe pineapple. Place the peels and one cinnamon stick into the pot, then add the pineapple core, reserving the fruit for other uses.

  3. Cover the pot with a dish towel and ferment at room temperature for 24-36 hours, checking for frothy foam indicating fermentation.

  4. Once desired fermentation is reached, strain out and discard all solids.

  5. Transfer the liquid to a pitcher and refrigerate.

  6. Before serving, taste the tepache and adjust sweetness or dilution with additional water or sugar as needed.

  7. Serve chilled, optionally over ice.
