Homemade Oatmeal Bread

Instructions

Preheat oven to 450 F for 30 minutes, or 1 hour if using a baking stone; if steaming, prepare 2 cups of boiling water.

Combine oats and whole wheat flour in a bowl, then stir in boiling water.

Mix in honey, optional molasses, oil, and salt, then cool for 30 minutes.

In a separate bowl, dissolve yeast and a pinch of sugar in warm water; let stand 10 minutes until foamy.

Add the foamy yeast mixture to the oat mixture and mix thoroughly.

Gradually incorporate all-purpose flour, 1/2 cup at a time, until a firm dough forms.

Knead the dough on a lightly floured surface for 4-5 minutes until elastic.

Form the dough into a ball, place it in an oiled bowl, and turn to coat; cover and let rise in a warm spot for about 1 hour until doubled.

Shape the dough into a sandwich loaf and place it in a pan; spray the top with water and sprinkle with oatmeal or desired topping.

Cover and let rise until almost double.

For steaming: Place a roasting pan on a lower rack and fill with 2 cups boiling water after placing bread in oven; spray oven sides 2-3 times within the first 5 minutes of baking.

Slash the top of the loaf.

Place the loaf pan in the oven, reduce temperature to 400 F, and bake for 30-40 minutes, or until the bread's internal temperature reaches 190 F.

Cool the bread for at least 1 hour (2 hours if steamed) before slicing.
