Homemade Lime Cordial
A sweetened lime cordial, perfect for homemade sodas and cocktails like the gimlet, can be prepared in just 15 minutes.

Instructions

Start boiling 1 1/2 cups of water in a medium saucepan.

While water heats, combine 3/4 cup granulated sugar with 3/4 teaspoon citric acid and 1/2 teaspoon tartaric acid (if using) in a small bowl.

Add the sugar mixture to the boiling water and stir until fully dissolved.

Remove from heat, then stir in the peel from 3 limes and 2/3 cup fresh lime juice.

Return to low heat and simmer for 2 minutes.

Remove from heat, cover, and cool completely for about one hour.

Transfer the mixture to a sealed container and refrigerate overnight.

Strain the cordial through a fine-mesh strainer to remove lime peels.

Pour the strained cordial into a clean bottle and refrigerate for an additional day before use.
