Homemade Laffa Bread

A homemade pita-like flatbread, laffa bread can be cooked in the oven or on the stovetop.

Instructions

  1. If baking, preheat oven to 500 F with 2 inverted baking sheets for 10 minutes (or 525 F for a pizza stone from start); otherwise, prepare a grill pan or cast-iron skillet for pan-frying.

  2. Combine water, sugar, and yeast; allow to foam for 5-10 minutes.

  3. Add flour, salt, and olive oil, mixing until a soft, sticky dough ball forms.

  4. Cover the dough and let it rise until doubled, approximately 1 to 1.5 hours.

  5. Divide the dough into 8 equal pieces, shape into balls, cover, and let rise for 10-20 minutes more.

  6. For baking: Roll each dough ball into a thin 8-10 inch round or oval, prick with a fork, transfer to hot baking sheets, and cook for 3-6 minutes until golden brown; remove and cover with foil.

  7. Repeat baking with remaining dough.

  8. For pan-frying: Heat an oiled grill pan or cast-iron skillet over medium-high, then cook each dough piece for 1.5 minutes per side until browned, bubbled, and charred.

  9. Remove pan-fried laffa, cover with foil, and repeat with remaining dough, oiling the pan as needed.
