Instructions

  1. Combine kiwifruit, bananas, sweet onions, lemon zest, lemon juice, raisins, brown sugar, ginger, cayenne pepper, allspice, nutmeg, cardamom, salt, and white vinegar in a heavy saucepan.

  2. Bring the mixture to a boil, then reduce heat and simmer uncovered for approximately 1 hour until it thickens; ensure it does not scorch and confirm consistency with a spoon test.

  3. If canning, sterilize jars by boiling for 15 minutes, and prepare lids per manufacturer's instructions.

  4. Fill sterilized jars with the hot chutney, leaving 1/2 inch of headspace.

  5. Process filled jars in a hot water bath, following manufacturer's directions for your chosen lids and seals.

  6. Cool the jars, test the seals, then label with contents and date.
