Homemade Kaiser Rolls Recipe
Kaiser-style sandwich rolls, easily prepared by hand or mixer, are perfect for homemade sandwiches or burgers.

Instructions

Preheat the oven to 375 F.

Combine water and yeast in a stand mixer bowl; let stand for 10 minutes.

Add 2 cups of flour and beat until smooth.

Switch to a dough hook, then add the remaining flour, milk powder, sugar, salt, 3 tablespoons butter, and the beaten egg.

Mix on medium speed for 6 minutes, adjusting consistency with small amounts of flour or water until the dough is soft but pulls away from the bowl. (If kneading by hand, mix with a wooden spoon, then knead on a floured surface for 10 minutes until smooth and elastic.)

Oil a large bowl, place the dough ball inside, and turn to coat.

Cover and let the dough rise in a warm, draft-free place for 1 hour, or until doubled in bulk.

Portion the dough into 2- to 3-ounce pieces.

On a lightly floured surface, roll each piece into a 12- to 15-inch rope. Form a loose overhand knot, then wrap each tail around the loop and pinch the ends together underneath.

Arrange the rolls on a parchment-lined baking sheet. Cover loosely and let rise at room temperature for 1 hour.

Prepare an egg wash by beating 1 egg white with 1 teaspoon water, or melt some butter. Brush the rolls with the egg wash and sprinkle with sesame or poppy seeds, if desired, or brush with melted butter.

Bake for 15 to 18 minutes, until golden brown.
