Homemade Irish Baked Beans

Instructions

  1. Preheat the oven to 320 F / 160 C.

  2. Soak dried beans in cold water overnight; the next day, rinse them and place in an ovenproof pan, covering with cold water.

  3. Add the clove-pierced onion, 2 teaspoons tomato concentrate, peppercorns, bay leaf, sage, garlic, and canned tomatoes to the beans. Bring to a boil on the stovetop.

  4. Transfer the pan to the preheated oven and bake for 2 to 3 hours until soft; add boiling water and reduce heat if beans dry out during cooking.

  5. Remove the bay leaf, cloves, and onion. Stir in the diced tomato and remaining tomato concentrate, then cook for an additional 30 minutes.

  6. Season to taste and serve with olive oil if desired.
