Homemade Hoagie Roll Recipe

Preheat the oven to 4250F.

Combine warm water, yeast, and sugar; let stand 5 minutes.

Whisk together milk, egg, and olive oil; add to the yeast mixture with bread flour and salt.

Mix and knead the dough for 8 minutes until firm, smooth, and slightly tacky, adjusting flour or water as needed.

Grease a large bowl with olive oil. Form the dough into a ball, place in the oiled bowl, turn to coat, cover, and let rise for 1.5 hours or until doubled.

The dough can be refrigerated overnight; if so, let it return to room temperature (1.5-2 hours) before proceeding.

Line two baking sheets with parchment paper and sprinkle with cornmeal or semolina.

Divide the dough into 10 portions (about 4 ounces each) and shape into 6-inch hoagie rolls; arrange on the prepared sheets.

Cover rolls with a light towel and let rise for 1 hour at room temperature.

Score the tops of the rolls with a 1/4-inch deep slit.

Place rolls in the oven and immediately reduce the temperature to 3750F.

Bake for 15 to 18 minutes, rotating the pan once halfway through, until the internal temperature reaches 1950F or they sound hollow when tapped.
