Instructions

  1. Heat water, then soak dried chiles in hot water for 30 minutes.

  2. Drain the chiles and remove their stems and seeds.

  3. In a food processor, combine the chiles, garlic, salt, and olive oil, then process until blended.

  4. Add coriander, caraway seeds, and cumin; blend until a smooth paste forms.

  5. Transfer the harissa to an airtight container and drizzle with olive oil to maintain freshness.
