Instructions

  1. Preheat the oven to 300 F.

  2. Combine flour, sugar, cinnamon, baking powder, and salt in a large bowl. In a separate bowl, whisk egg, oil, honey, 2 tablespoons milk, and vanilla extract.

  3. Stir wet ingredients into dry, adding extra milk if necessary to form a soft, non-sticky dough.

  4. Knead dough until smooth, then divide in half, wrap, and chill for at least one hour.

  5. Roll each dough half to 1/16 inch thickness on parchment paper and transfer to a baking sheet.

  6. Bake for 10 minutes. Remove from oven, immediately score into 3x2-inch rectangles, and prick with a fork.

  7. Return to oven and bake for an additional 18 to 20 minutes.

  8. Remove from oven, cut completely through the scored lines, and cool on the baking sheets until crisp.
