Instructions

  1. Heat a cast-iron griddle or heavy nonstick skillet over medium heat.

  2. Combine gluten-free masa harina and salt in a large bowl. Gradually add about 1 cup of hot water, mixing until a soft, pliable dough ball forms.

  3. Divide the dough into 12 to 16 equal pieces, roll them into balls, and cover them with a damp towel.

  4. Flatten each dough ball into a tortilla.

  5. Cook each tortilla on the hot griddle for about 1 minute per side, or until lightly browned.

  6. Stack and wrap cooked tortillas in a towel or place them in a tortilla bowl to keep warm until serving.
