Instructions

  1. Prepare brine by boiling white-wine vinegar, water, sugar, herbs, and spices in a large nonreactive saucepan for 3 minutes, ensuring sugar and salt dissolve.

  2. Peel, halve, deseed, and cut cucumbers into 1/2-inch chunks.

  3. Layer cucumber chunks, sliced onion, and dill sprigs into 2 to 3 sterilized quart canning jars.

  4. Pour hot brine over cucumbers, leaving 1/4 inch headspace. Screw caps on tightly and cool completely.

  5. Refrigerate for up to a few weeks, or process in a hot water bath for storage up to one year.
