Homemade General Tso's Chicken With Red Chili Peppers

Instructions

  1. Preheat oil in a wok to 350-360 F (175-180 C).

  2. Cut chicken into 1-inch cubes; combine with light soy sauce, egg, and pepper, then coat thoroughly with cornstarch.

  3. In a separate bowl, mix dark soy sauce, rice vinegar, rice wine, sugar, broth, ginger, garlic, and optional 2 teaspoons cornstarch; stir until sugar dissolves.

  4. Deep-fry chicken in batches for 3-4 minutes until crispy, then remove and drain.

  5. Drain and clean the wok, then heat 2 tablespoons of oil.

  6. Stir-fry green onions and dried chile peppers for approximately 30 seconds until aromatic.

  7. Return the fried chicken to the wok; stir-fry for about 1 minute until browned.

  8. Push the chicken to the wok's sides, re-stir the sauce, and pour it into the center.

  9. If cornstarch was added to the sauce, stir continuously for 1-2 minutes to thicken.

  10. Combine the chicken and sauce, cooking and stirring for another 2 minutes until the chicken is well coated.

  11. Serve immediately.
