Instructions
-
Preheat the oven to its lowest setting, 170 F or below.
-
Coarsely chop an unpeeled apple, then purée it with strawberries until smooth.
-
Transfer the purée to a saucepan, stir in lemon juice, sugar, and salt. Cook over medium-high heat until bubbling, then simmer for 10 to 15 minutes, stirring occasionally.
-
Strain the fruit mixture through a fine-mesh sieve, pressing out the liquid, and discard any solids.
-
Return the liquid to the saucepan and simmer for another 15 to 20 minutes, stirring occasionally, until thick and jammy.
-
Line a baking sheet with a silicone mat or parchment paper. Pour the fruit mixture onto the sheet and spread into an even layer, leaving a 1-inch border.
-
Bake for at least 2 1/2 hours, or until the center is no longer tacky. Remove from the oven and let cool completely.
-
Peel the cooled fruit off the mat onto a sheet of wax paper. If the underside is still sticky, bake for an additional 15 minutes or more to dry it out.
-
Roll the fruit with the wax paper into one long roll, then cut into one-inch strips.
