Instructions

  1. Preheat the oven to its lowest setting, 170 F or below.

  2. Coarsely chop an unpeeled apple, then purée it with strawberries until smooth.

  3. Transfer the purée to a saucepan, stir in lemon juice, sugar, and salt. Cook over medium-high heat until bubbling, then simmer for 10 to 15 minutes, stirring occasionally.

  4. Strain the fruit mixture through a fine-mesh sieve, pressing out the liquid, and discard any solids.

  5. Return the liquid to the saucepan and simmer for another 15 to 20 minutes, stirring occasionally, until thick and jammy.

  6. Line a baking sheet with a silicone mat or parchment paper. Pour the fruit mixture onto the sheet and spread into an even layer, leaving a 1-inch border.

  7. Bake for at least 2 1/2 hours, or until the center is no longer tacky. Remove from the oven and let cool completely.

  8. Peel the cooled fruit off the mat onto a sheet of wax paper. If the underside is still sticky, bake for an additional 15 minutes or more to dry it out.

  9. Roll the fruit with the wax paper into one long roll, then cut into one-inch strips.
