Homemade Fresh Ginger Ale

Instructions

  1. Combine water, ginger, and lemon peel in a 4-quart saucepan and bring to a boil.

  2. Reduce heat, simmer for 10 minutes, then add sugar and continue boiling until reduced to 3 cups (about 15 minutes).

  3. Strain the ginger syrup into a bowl, discarding the lemon peel and reserving cooked ginger if desired.

  4. Cool the syrup, then transfer to a sealed container and chill for at least one hour or up to one week.

  5. To serve, mix 1/4 cup syrup with 1 cup cold club soda per serving over ice, adjusting sweetness as needed.
