Homemade French Fries

A simple method for achieving hot, crispy, homemade french fries.

Instructions

  1. Wash, dry, and cut potatoes into 1/2-inch to 1/4-inch sticks.

  2. Soak the potato sticks in cool water for at least 2 hours or up to overnight.

  3. Drain and thoroughly pat dry the potato sticks, then air-dry them.

  4. Heat at least 2 inches of oil in a heavy pot to 325 F.

  5. Fry the potatoes in batches for about 5 minutes until cooked through but pale; remove, drain, and cool completely for at least 30 minutes.

  6. Increase oil temperature to 350-375 F.

  7. Re-fry the cooled potatoes in batches until golden brown, about 5 minutes.

  8. Remove, drain, and season the hot fries with salt; serve immediately.
