Instructions

  1. Preheat the oven to 350°F.

  2. Combine ground lamb, egg, garlic, cumin, coriander, smoked paprika, oregano, salt, and black pepper in a large bowl.

  3. Press the mixture into an oiled 9x5-inch loaf pan and bake for approximately 30 minutes until golden brown.

  4. For optimal thin slicing, cool the cooked loaf completely, then wrap and refrigerate until firm; alternatively, slice immediately.

  5. When ready to serve, slice the firm lamb loaf very thinly.

  6. In a skillet, crisp the lamb slices with a little olive oil for a few minutes.

  7. Assemble sandwiches by filling warmed pita with the crisped lamb, lettuce, tomato, cucumber, onion, and a generous amount of tzatziki or tahini sauce.
