Instructions

  1. Combine mustard powder and water in a bowl to form a paste; set aside.

  2. In a saucepan, simmer vinegar, wine, onion, shallots, garlic, bay leaf, peppercorns, and juniper berries until reduced by two-thirds. Strain and chill the reduction.

  3. Stir the chilled reduction into the mustard paste, then add lemon juice, salt, and sugar. Let the mixture stand for 20 minutes.

  4. Simmer the mustard mixture in a saucepan over low heat for 15 minutes, then allow it to cool.

  5. Transfer to a sterile jar, seal, and store in a cool, dark place for 1 to 6 weeks to allow flavors to infuse.
