Instructions

  1. Beat softened butter and peanut butter until smooth and well-combined.

  2. Mix in vanilla and powdered sugar until fully incorporated.

  3. Stir in crisped rice cereal until just combined.

  4. Form the mixture into small balls and place them on a foil-lined baking sheet.

  5. Refrigerate the balls to firm them while melting the chocolate.

  6. Melt chocolate or candy coating in a microwave, stirring every 30 seconds until smooth.

  7. Dip each peanut butter ball partially into the melted chocolate, leaving a small top portion uncovered for the traditional buckeye appearance.

  8. Return dipped candies to the foil-lined baking sheet and refrigerate for about 15 minutes to set the chocolate.
