Homemade Crepes (Dairy or Pareve)

Homemade crepes, with an optional dairy-free variation, offer a versatile canvas for various fillings.

Instructions

  1. Whisk eggs and milk (or nondairy milk) in a large bowl.

  2. Add flour, butter, salt, and optional sugar or vanilla; whisk until the batter is smooth.

  3. Alternatively, blend all ingredients for 15 to 20 seconds until smooth, then rest the thin batter for at least 5 minutes.

  4. Lightly oil and warm a crepe pan or nonstick skillet over medium-high heat.

  5. Pour 1/4 cup of batter into the hot pan, then immediately tilt and rotate the pan to spread into a thin round.

  6. When the crepe's edges pull away and the top sets, flip it with a spatula and cook until the underside is lightly browned.

  7. Transfer to a plate; repeat with remaining batter, stacking finished crepes.

  8. Fill, fold, or roll crepes as desired and serve immediately.
