Instructions

  1. Start boiling water in a saucepan; add sugar and stir until dissolved, then simmer for 5 minutes before cooling completely.

  2. Combine vodka and torn mint leaves in a one-quart jar, shaking well to immerse herbs; infuse for 48 hours, shaking daily.

  3. After 2 days, add the cooled simple syrup to the mint infusion; shake and infuse for an additional 24 hours.

  4. Strain the liqueur through a cheesecloth-lined fine-mesh strainer, discarding mint and repeating once or twice to remove sediment.

  5. Funnel the finished crème de menthe into a 750-milliliter bottle or smaller containers.

  6. Add 3 to 5 drops of green food coloring and shake well to color the liqueur.
