Homemade Coffee Liqueur

Instructions

  1. Combine 3 cups sugar, 2 cups water, and a 2-inch split vanilla bean in a saucepan over medium-high heat. Bring to a boil, stirring until the sugar fully dissolves.

  2. Reduce heat to a simmer and cook for 30 minutes, or until the liquid reduces by half. Remove from heat, stir in 8 tablespoons instant coffee, and cool completely.

  3. Pour the cooled syrup and a 750-milliliter bottle of rum (or vodka) into a sealable jar. Shake thoroughly and let sit in a cool, dark place for 10 days, shaking periodically.

  4. After 10 days, strain the liqueur through a fine-mesh strainer or cheesecloth to remove solids, then store in a sealed bottle.
