Instructions

  1. Remove the colorful zest from citrus peels, then finely chop the white pith and ensure you have 1/2 pound.

  2. In a pot, combine the chopped pith with lemon juice and let stand for 2 hours; then add water and let stand for another hour.

  3. Bring the mixture to a boil over high heat, then reduce to low and simmer for 15 minutes, allowing it to cool completely.

  4. Strain the cooled mixture through a jelly bag or cheesecloth to obtain the liquid pectin.
