Homemade Chicken Gravy

A simple 3-ingredient gravy, ideal for complementing roast chicken, can be easily prepared to enhance your meal.

Instructions

  1. Collect all chicken pan juices, cool, and skim the fat. Measure 2 1/2 cups of drippings, supplementing with chicken stock if needed.

  2. Place the roasting pan over high heat on the stovetop.

  3. As residual juices begin to bubble, add flour and stir quickly for one minute, scraping up any sediment.

  4. Whisk in the wine until combined, then add all measured drippings or stock into the flour-wine mixture.

  5. Bring to a boil and simmer for 5 minutes.

  6. If using, stir in red currant jelly until dissolved, then strain the gravy through a fine sieve into a serving vessel.

  7. For a thicker gravy, create a paste by mashing 1 tablespoon each of butter and flour, then gradually whisk into the boiling gravy until desired thickness is reached before straining.
