Instructions

  1. Place chicken pieces in a large pot and cover with 6 quarts of cold water, then bring to a gentle boil.

  2. Skim any foam from the surface.

  3. Add onions or leeks, celery, salt, and any optional ingredients; return to a boil and skim again.

  4. Reduce heat to a gentle simmer and cook for 1 to 2 hours, removing any foam, until the broth is flavorful.

  5. Allow the broth to cool, then strain to remove and discard all solids.

  6. Chill or freeze the broth for later use.
