Place chicken pieces in a large pot and cover with 6 quarts of cold water, then bring to a gentle boil.

Skim any foam from the surface.

Add onions or leeks, celery, salt, and any optional ingredients; return to a boil and skim again.

Reduce heat to a gentle simmer and cook for 1 to 2 hours, removing any foam, until the broth is flavorful.

Allow the broth to cool, then strain to remove and discard all solids.

Chill or freeze the broth for later use.
