Homemade Carnitas

A classic Mexican dish, these fried pork carnitas are ideal served alone or as a flavorful filling for tacos and sandwiches.

Instructions

  1. Heat 2 tablespoons of lard or oil in a large, heavy pot and brown the meat on all sides.

  2. Remove the pot from heat, add orange juice, enough broth to cover the meat, garlic, bay leaf, and onion, then return to heat and bring to a boil.

  3. Reduce heat, cover, and simmer for 2.5 hours; afterward, uncover and increase heat to evaporate excess liquid.

  4. Once liquid is gone, remove the bay leaf, garlic, and onion pieces.

  5. Break the meat into smaller chunks with tongs and fry, adding more lard or oil if needed, seasoning with salt until the edges are browned and crispy.

  6. Serve as-is, or chop and shred for tacos or burritos.
