Homemade California Rolls

A simple homemade California roll features imitation crab, avocado, and cucumber.

Instructions

  1. Prepare avocado by halving, removing the pit, and then slicing or mashing it.

  2. Tear imitation crab into pieces, season with mayonnaise and salt, then julienne cucumber into 1-inch pieces.

  3. Cover a bamboo rolling mat with plastic wrap, place a dried seaweed sheet on top, then spread 1/4 of the sushi rice over the nori and sprinkle with sesame seeds.

  4. Flip the sushi layer so the seaweed faces up, remove the plastic wrap, then arrange avocado, crab, and cucumber horizontally on the seaweed. Roll the bamboo mat to form a cylinder, pressing firmly as you roll, then unroll and remove the finished sushi.

  5. Repeat to make more rolls. Wet a knife before slicing each sushi roll into bite-size pieces.
