Homemade Cajun Boudin Sausage

A homemade boudin sausage features seasoned pork, rice, green onion, and parsley encased for a traditional Louisiana-style preparation.

Instructions

  1. Start boiling water in a large saucepan with pork meat, pork liver, salt, and pepper; reduce heat and cook until meat is very tender for up to 1 hour 45 minutes.

  2. Remove cooked meat, chop into 1 to 2-inch pieces, and set aside the broth.

  3. Reserve 1/2 cup green onions and half the parsley.

  4. Grind the warm meat with the remaining green onions and parsley.

  5. Combine the ground mixture with reserved green onions, parsley, rice, and enough reserved broth to moisten.

  6. Load a sausage stuffer with casing and fill with the dressing.

  7. Cook the sausage as desired.
