Instructions

  1. Beat butter until smooth in a stand mixer.

  2. Incorporate powdered sugar, cream, vanilla extract, salt, and 1/4 teaspoon mint extract; mix on low, then beat on medium until smooth.

  3. Taste and add more mint extract if needed.

  4. Dust a work surface with confectioners' sugar. Divide the candy into portions for different colors, wrapping unused candy to prevent drying.

  5. Knead 1 to 2 drops of food coloring into each candy portion on the sugared surface until evenly blended, wearing gloves to prevent staining.

  6. Shape the candy into pillows, balls, or cut shapes with cookie cutters.

  7. Let the mints dry on a baking sheet at room temperature overnight for easy handling and storage.
