Homemade Blue Ribbon Beef Brisket Jerky

Instructions

  1. Preheat oven to its lowest setting, around 110 F.

  2. Trim all fat from beef and slice it 1/8-inch thick across the grain; partially freeze meat to assist with thin slicing.

  3. Blend soy sauce, Worcestershire sauce, onion powder, garlic powder, ginger, and Chinese 5-spice powder.

  4. Coat each beef slice in the marinade, place them in a shallow dish, then pour any leftover marinade over the top.

  5. Cover the dish and refrigerate the beef overnight.

  6. Line baking sheets with paper towels, arrange the marinated meat in a single layer, and cover with additional towels.

  7. Press the meat flat using a rolling pin.

  8. Discard the towels and transfer the meat directly to the oven racks.

  9. Dry the jerky for 8 to 12 hours, periodically checking the meat and oven temperature.
