Homemade Blue Ribbon Beef Brisket Jerky
A homemade beef jerky features a savory marinade with soy sauce, garlic, onion, ginger, and Chinese five spice.

Instructions

Preheat oven to its lowest setting, around 110 F.

Trim all fat from beef and slice it 1/8-inch thick across the grain; partially freeze meat to assist with thin slicing.

Blend soy sauce, Worcestershire sauce, onion powder, garlic powder, ginger, and Chinese 5-spice powder.

Coat each beef slice in the marinade, place them in a shallow dish, then pour any leftover marinade over the top.

Cover the dish and refrigerate the beef overnight.

Line baking sheets with paper towels, arrange the marinated meat in a single layer, and cover with additional towels.

Press the meat flat using a rolling pin.

Discard the towels and transfer the meat directly to the oven racks.

Dry the jerky for 8 to 12 hours, periodically checking the meat and oven temperature.
