Instructions

  1. Preheat oven to 450 F and line a baking sheet with parchment paper.

  2. To create the baking mix: In a large bowl, thoroughly combine flour, salt, and baking powder.

  3. Cut in butter or shortening (using a food processor or by hand) until the mixture resembles coarse meal.

  4. Store the prepared mix in an airtight container; refrigerate or freeze if it contains butter.

  5. To prepare biscuits with the mix: Combine the baking mix and milk in a bowl, stirring until a dough forms.

  6. If using buttermilk, add 1/4 teaspoon baking soda per 1/2 cup buttermilk used.

  7. Turn dough onto a lightly floured surface and knead 6 to 8 times until cohesive.

  8. Pat dough to a 1/2-inch thickness and cut out 2 1/2-inch biscuits.
