Instructions

  1. Oil the grill grates.

  2. Combine all sauce ingredients in a bowl or food processor and mix until smooth.

  3. Adjust sauce flavor by adding more fish sauce for saltiness, or fresh lime to reduce saltiness.

  4. Coat meat, chicken, or fish thoroughly with the sauce. Marinate for a minimum of 20 minutes, or refrigerate for up to 24 hours.

  5. While grilling, baste the meat once on each side, then discard any remaining sauce that touched the raw meat.

  6. For a separate serving sauce, prepare an additional batch, warm, and serve as a dipping sauce or glaze.
