Homemade Banana Ketchup

A unique banana ketchup, featuring a dominant banana flavor with a hint of tomato, serves as an excellent condiment for pork or chicken.

Instructions

  1. Combine bananas, garlic, 2/3 cup vinegar, raisins, onions, and tomato paste in a food processor; process until smooth, then transfer to a large saucepan.

  2. Add the remaining 2/3 cup vinegar, 3 cups water, brown sugar, salt, and chipotle chile pepper to the saucepan and stir.

  3. Bring the mixture to a boil over medium-high heat, stirring frequently. Reduce heat to low and simmer uncovered, stirring occasionally, for 1 hour and 15 minutes.

  4. If the ketchup thickens excessively, add up to 1 cup of the reserved water.

  5. Incorporate corn syrup, allspice, cinnamon, nutmeg, and cloves; cook over medium-low heat, stirring often, for 15 minutes or until thickened to coat a spoon.

  6. Stir in rum, then remove from heat and cool for 10 minutes.

  7. Strain the ketchup through a fine sieve, pressing solids.

  8. Allow to cool completely to room temperature.

  9. Bottle the banana ketchup in glass jars, cover, and refrigerate.
