Instructions
-
Combine bananas, garlic, 2/3 cup vinegar, raisins, onions, and tomato paste in a food processor; process until smooth, then transfer to a large saucepan.
-
Add the remaining 2/3 cup vinegar, 3 cups water, brown sugar, salt, and chipotle chile pepper to the saucepan and stir.
-
Bring the mixture to a boil over medium-high heat, stirring frequently. Reduce heat to low and simmer uncovered, stirring occasionally, for 1 hour and 15 minutes.
-
If the ketchup thickens excessively, add up to 1 cup of the reserved water.
-
Incorporate corn syrup, allspice, cinnamon, nutmeg, and cloves; cook over medium-low heat, stirring often, for 15 minutes or until thickened to coat a spoon.
-
Stir in rum, then remove from heat and cool for 10 minutes.
-
Strain the ketchup through a fine sieve, pressing solids.
-
Allow to cool completely to room temperature.
-
Bottle the banana ketchup in glass jars, cover, and refrigerate.
