Homemade Baked Beans With Country Ham

Instructions

  1. Preheat the oven to 350 F.

  2. Rinse and sort beans, discarding any discolored ones or stones.

  3. Place beans in a saucepan, cover with water, bring to a boil for 1.5 minutes, then remove from heat, cover, and let stand for 1 hour.

  4. Add water to the pan to 1/2 inch above the beans, bring to a boil, then reduce heat to simmer, covered, for 1.5 hours; do not boil. Drain the beans, reserving the liquid.

  5. Heat oil in a small skillet and fry diced ham until lightly browned.

  6. Combine the reserved bean liquid with molasses, brown sugar, salt, and mustard, stirring to blend.

  7. Layer the beans, sliced onion, and ham in a 3-quart casserole. Pour the liquid mixture over the layers, adding water if necessary to cover the top.

  8. Cover the casserole and bake on the center rack for 3 hours, stirring occasionally.

  9. Remove the cover and continue baking for 30 minutes, or until the liquid has reduced and thickened, stirring occasionally.
