Instructions
-
Preheat the oven to 350 F.
-
Rinse and sort beans, discarding any discolored ones or stones.
-
Place beans in a saucepan, cover with water, bring to a boil for 1.5 minutes, then remove from heat, cover, and let stand for 1 hour.
-
Add water to the pan to 1/2 inch above the beans, bring to a boil, then reduce heat to simmer, covered, for 1.5 hours; do not boil. Drain the beans, reserving the liquid.
-
Heat oil in a small skillet and fry diced ham until lightly browned.
-
Combine the reserved bean liquid with molasses, brown sugar, salt, and mustard, stirring to blend.
-
Layer the beans, sliced onion, and ham in a 3-quart casserole. Pour the liquid mixture over the layers, adding water if necessary to cover the top.
-
Cover the casserole and bake on the center rack for 3 hours, stirring occasionally.
-
Remove the cover and continue baking for 30 minutes, or until the liquid has reduced and thickened, stirring occasionally.
