Instructions

  1. Preheat an oven to 250°F or set a slow cooker to high.

  2. Rinse the beans, remove any imperfections, and soak them overnight in cool water.

  3. Chop the salt pork or bacon, then layer half of it in the bottom of a Dutch oven or slow cooker.

  4. Drain the beans, then place half of them on top of the pork.

  5. Peel and chop the onion, then layer it on top of the beans.

  6. Add the remaining beans, topped with the remaining salt pork or bacon.

  7. Combine molasses, brown sugar, and mustard with 3 cups boiling water; stir until dissolved.

  8. Pour the mixture over the beans in the pot.

  9. Cover the pot and cook for 4 hours; check for tenderness, then stir in the salt.

  10. Cover again and cook for an additional 2 hours, removing the lid after the first hour for thicker beans, or leaving it on for soupier.

  11. Serve immediately or reheat the next day for enhanced flavor.
