Instructions

Wash and quarter apples, removing stems, blossom ends, and seeds.

Combine apples and water in a medium saucepan, then bring to a rolling boil.

Reduce heat, cover, and simmer for 20 minutes, mashing apples slightly; cool for 10 minutes.

Strain the pulp first through a fine-mesh strainer, then a cheesecloth-lined strainer, to extract clear apple juice.

In a medium saucepan, bring the apple juice to a boil, stirring in raw sugar until dissolved.

Reduce heat, cover, and simmer for 5 minutes.

Remove from heat, cool for 10 minutes, then stir in citric acid.

Once completely cool, transfer syrup to sealed jars and refrigerate for up to 2 months.

To make soda, pour apple syrup into an ice-filled glass, top with club soda, and stir.

Garnish with an apple wedge before serving.
