Instructions

  1. Preheat the oven to 350 F (175 C).

  2. Prepare the filling by crumbling feta or goat cheese and mixing with about 1 tablespoon of chopped parsley, if not adding herbs to the dough.

  3. In a large bowl, combine 2 cups of flour with yogurt, melted butter, salt, baking powder, and sugar. Knead, gradually adding more flour, until a smooth, firm dough forms.

  4. If using fresh herbs, knead them thoroughly into the dough.

  5. Form the dough into plum-sized balls for breakfast rolls or apricot-sized for bite-sized pastries.

  6. Flatten each dough ball on a floured surface, add a small amount of filling, then fold and pinch the edges to seal.

  7. Place the rolls seam-side down on a parchment-lined baking tray, shaping them into ovals, leaving 1 inch between each.

  8. Brush roll tops with egg yolk and sprinkle with sesame, poppy, or black cumin seeds.

  9. Bake until golden brown and puffed.

  10. Serve warm, optionally with fruit preserves and honey.
